About the Role:
Role: Sous Chef, Hotel du Vin
Rate of Pay: £34,000 per Annum plus Generous Company Benefits, Training and Development
Contract: Full time, Permanent Contract / 45 Hours per week

At Hotel Du Vin fifty percent of all revenue comes from catering sales. In many of our hotels we can be busier in our Brasseries than most local restaurants! This gives our chef brigades a great opportunity to develop themselves within our kitchens. Learning new skills, working in fast paced environments under pressure and sometimes with produce they haven't worked with before.
What you'll be doing as a Sous Chef:
- Maintain tight control over food costs and monitor spend as a percentage of sales
- Oversee stock movement and ensure stock security
- Minimise food wastage and support monthly stock checks
- Report monthly stock control and monetary values to the Financial Controller
- Achieve and exceed budgeted gross profit targets
- Ensure professional kitchen operations in the absence of the Head Chef
- Maintain up-to-date product, client, and service knowledge; communicate effectively with relevant staff
- Regularly evaluate performance and products to identify future challenges
- Foster effective daily communication with Bistro, Brasserie, Café Bar, Reception, and Meetings teams
- Consistently deliver service levels that exceed guest expectations
- Collaborate with the team and adhere to company menu SOPs
- Ensure compliance with statutory regulations and food hygiene policies (HACCP); train staff accordingly
- Demonstrate flexibility in hours, location, and responsibilities as required by the company
