Hygiene Officer

Frasers Hospitality is looking for a Hygiene Officer to join the team at Fraser Suites, Abuja. As Hygiene Officer, you will delelop and implement Food Safety Programmes:  Create and maintain a comprehensive Food Safety Management System (FSMS) based on HACCP principles, encompassing all food handling procedures from production to service.

Develop and ImplementWh What you will be doing as Hygiene Officer:

• • Detailed standard operating procedures (SOPs) for all kitchen areas and F&B outlets.
  • Identification and monitoring of Critical Control Points (CCP).
  • Educate employees on personal hygiene, proper uniform care, and the importance of maintaining a professional appearance.
  • Regular review and updates to the Food Safety Management System.
  • Monitoring and enforcement of Food Safety Standards: Conduct frequent inspections and audits of all food and beverage areas to ensure compliance with the FSMS, local regulations, and hotel standards. This includes:
  • Temperature monitoring of food storage and cooking equipment.
  • Verification of proper food handling techniques (e.g., cross-contamination prevention, proper cooking temperatures).
  • Inspection of food deliveries for quality and safety.
  • Conduct internal and supplier audits to ensure adherence to food safety regulations and standards.
  • Monitoring of cleaning and sanitation procedures.
  • Create and implement specific grooming standards for all staff, ensuring they are in line with the hotel's brand and guest expectations.
  • Develop and deliver comprehensive training programs for all food and beverage staff on food safety best practices, HACCP principles, personal hygiene, proper use of equipment, and cleaning procedures. This includes:
  • Regular refresher training.
  • Specialised training on specific food safety topics (e.g., allergen management, safe handling of seafood).
  • Training on new regulations or procedures.

What we’re looking for:

• Education and Experience

  • Bachelor's degree or equivalent in Food Science, Nutrition, Hospitality Management, or a related field.
  • Certification in Food Safety and Hygiene (e.g., HACCP, HSE, etc).
  • Extensive experience in food safety management, preferably in a high-end restaurant or hotel setting.

  Technical/ Skills

  • Good interpersonal skills.
  • High level of written and spoken English language.
  • Basic computer knowledge. (Excel, Word, PowerPoint, Outlook)
  • Basic hospitality knowledge.

  Personal Attributes

  • Thorough knowledge of food safety regulations, HACCP principles, and best practices.
  • Strong understanding of food microbiology, foodborne illnesses, and allergen management.
  • Excellent communication, training, and interpersonal skills.
  • Ability to work independently and as part of a team.
  • Strong organizational, time-management, and problem-solving skills.
  • Attention to detail and a commitment to maintaining the highest standards of food safety.
